Greek Spanakopita

Ingredients:

  • 2 cups fresh spinach, wilted and drained

  • 1 cup feta cheese, crumbled

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 1 package phyllo dough

  • 1 egg, beaten (for egg wash)

Instructions:

  • Preheat your oven to 400°F (200°C).

  • In a large bowl, combine the wilted spinach, crumbled feta cheese, chopped onion, minced garlic, dried oregano, salt, and pepper. Mix well.

  • Unroll the phyllo dough and cut it into rectangles (about 6x8 inches).

  • Brush a 9x13 inch baking dish with egg wash.

  • Place a rectangle of phyllo dough in the prepared baking dish and brush it with more egg wash.

  • Spoon a portion of the spinach and feta mixture onto the phyllo dough, leaving a small border around the edges.

  • Roll up the phyllo dough tightly, tucking in the sides as you go. Place seam-side down in the baking dish.

  • Repeat the process with the remaining phyllo dough and filling.

  • Brush the top of the spanakopita with more egg wash and bake in the preheated oven for 45-50 minutes, or until golden brown.
